Title: Country Compote

1/2cRaisins
2cWine, fruity white; such as Chenin Blanc, or white grape jui
1/4cHoney
2tsLemon peel; finely shredded
4 Oranges
2cStrawberries, fresh; sliced or 2 md. pears, cut into bite si
1 Pomegranate; opt.

In a small container place raisins and wine; cover and soak overnight. To prepare the compote, drain raisins, reserving wine; set raisins aside.

In a medium saucepan combine reserved wine, honey, and lemon peel. Bring to boiling; reduce heat and simmer, uncovered, for 2 minutes. Cool.

With a sharp knife, remove and discard the peel and white membrane from the oranges. Section oranges, and cut each section in half. Add the oranges and raisins to the wine mixture and carefull toss. Transfer to a large serving bowl. Chill, covered, for at least 4 hours or up to 24 hours.

To serve, halve the pomegranate; peel back rind and use fingers to push out the seeds. (You can do this a day ahead.) Place in a small plastic bag and chill. Top the orange mixture with strawberries or pears and sprinkle with pomegranate seeds.
